From the very beginning we were clear about one thing: we did not want a heavy pizza. A dough that feels light when you eat it. Generous toppings, but always balanced. Flavourful, but never excessive. Everything we do in the kitchen serves that goal.
Patience is the main ingredient
The secret is not a secret at all — it is time. We use minimal yeast and let the dough ferment slowly over two days. That long, cool rest lets the flour and water do what they naturally do: develop flavour and break down in a way that makes the final crust easier to digest.
It is a less forgiving way to make pizza. It means planning two days ahead, checking fermentation early in the morning, and reading how the dough behaves in tropical heat and humidity. But it is the difference between a pizza that weighs you down and one you can finish without regret.
Good flour, honest toppings
We work with Italian Caputo flour for its consistency, and premium toppings imported from Italy to stay true to the flavours that inspired us. The oven came directly from Italy too — fierce, even heat for a blistered, leopard-spotted crust.
Simple ingredients. Slow fermentation. Premium products. Honest flavour. That is the whole philosophy, and you can taste every part of it.
